BITE Eats: Zabaglione


If it raining (especially if it’s been raining for a week) and you feel like staying in all afternoon (after sneaking out in the morning to catch the first show of Tron in Imax 3D and brave the crowds at ToysRUs) and you feel tired from moving furniture and cleaning out closets and, instead, feel like sprawling on the couch and catching up on every episode of a TV series like Fringe or Bones or Walking Dead (or all three), then zabaglione is a good thing to make and eat straight from the bowl.   Later, you can use the leftover egg whites to make these.

It’s December.  It’s all about eating.

  • 4 egg yolks
  • 1/4 cup sugar
  • 1/2 cup Marsala

In a metal bowl over a pot of barely simmering water, whip egg yolks with sugar until light and foamy.  (Optional:  a tablespoon of flour stabilizes the mixture and prevents it from turning into an omelette.)

Add the Marsala and continue to beat until soft mounds form.

Eat as is, or stir in berries, grated chocolate,  jam, or mound the zabaglione over cake. It’s also excellent frozen.
