BITE Eats: Clotilde Dusolier’s Chocolate Chili Bites

The first blog I ever read faithfully was Clotilde Dusolier’s Chocolate & Zucchini way back in, oh, 2003 or 2004.  Reading her, I felt brave enough to start my own food blog (Abby Dabbles, long since shuttered) which led me to other food blogs and, eventually, to The Kitchn and Apartment Therapy and…well…here I am.  So, you could say that C&Z was the blog that started it all for me.   This adaptation of her chocolate chili bites are a nice twist on the cupcake/brownie argument; the addition of cayenne pepper gives them a little kick. That it makes 72 little bites should in no way be considered a problem.

  • 2 sticks butter
  • 1/2 lb. dark chocolate
  • 1 cup sugar
  • 5 eggs
  • 1 generous tablespoon flour
  • 1 tsp. ground cayenne pepper
  • 1 tsp salt

Preheat the oven to 400.

Melt the butter with the chocolate.  Remove from the heat and stir in the sugar.  Add the eggs, one by one, mixing thoroughly.  Add the flour, cayenne pepper and salt and mix well.

Pour the batter into mini cupcake pans.   Bake for approximately 10 minutes or just until set.  Let the pans cool on wire racks, then unmold the cakes and cool further.
